Apricot : Apricots are now one of the main fruits grown in Provence, but apricots originated from Mongolia, from where Chinese traders brought them to the Parth Kingdom on the banks of the Caspian sea, where the apricot tree became the emblem of Armenia, the origin of its scientific name “Armeniaca”. The Romans and Arabs then spread the use of the apricot via Armenia to Greece, then Italy, before arriving in southern France in the mid 1st century AD. At the French Court, riddles, which were already quite fashionable throughout the Renaissance, became an absolute craze under the reign of Henri III. His “mignons” and duchesses outdid each other to introduce the word apricot in witty, though often somewhat scandalous repartee. The Queen became angry and forbade the use of the name of the fruit. Countless recipes and love potions included the pulp or essence of apricot for aphrodisiac purposes.

DID YOU KNOW ?
The pulp of the apricot is astringent. It can be used as a facial mask to tighten the pores and revitalize the skin.

The kernel in the apricot pit is very oily and can be eaten, though it is often quite bitter. It contains tiny quantities of hydrocyanic acid which can be a violent poison.
cOOK'S TIP
A few apricot kernels add a nice almond flavor to apricot jam. Keep a few pits, break them open and place them in a cheesecloth which is added to the apricots while they are cooked to prepare jam.
HOW TO CHOOSE IT ?
Choose ripe apricots to enjoy all the taste and nutritional qualities. Choose by smell more than color, and avoid hard fruit. Apricots do not ripen once picked.
