LAMB
: In the sheepfolds on Mont-Ventoux, in the Comtat plains and in the Luberon range, fresh straw awaits the flock. When the rams and ewes return from high in the mountains, it means summer’s heat is fading. The return from the mountains is called the “descending transhumance”. All summer long, the sheep remained at the high altitudes, grazing and benefiting from the pure air and pastureland. The young will be born in early autumn or late winter, and will grace the tables at Christmas time, and Easter. Famous Provençal recipes such as leg of lamb with garlic cream, lamb chops, brochettes with aromatic herbs and lamb stew, Avignon style! Today, this sheep-rearing tradition continues to thrive, and consumption of lamb in Provence is twice as high as elsewhere in France. Sheep-raising is the primary animal husbandry activity in Vaucluse. There are 150 raisers with some 30,000 head of sheep all together.

In the Middle Ages, sheep-raising was a strong Provencal tradition, and every part of the animal was put to use. The skin, the intestines, and the meat of course, but the suet too was an important commodity. At the time, candles were bought from the butcher ! Today, sheep-raising remains a dynamic farming activity, and twice as much lamb is consumed in Provence as in the rest of France.
In Vaucluse, sheep-raising is the number one animal raising activity. There are 150 ranchers for some 30,000 sheep. Sheep-raising protects the environment and maintains the rural and agricultural fabric of Vaucluse. It is most frequent in the highland areas around the Sault plateau, the Albion plateau, and the Luberon, but is also present in the irrigated prairies in the Comtat Venaissin. |

| From the pasture to the table |
| Lambs mostly come from mothers of the Merinos race, a breed which is well adapted to the transhumance. There are large flocks of Merinos sheep in the Comtat Venaissin. The Préalpes du Sud type of sheep, more energetic and less docile, make up the sedentary flocks, such as in the Sault and Apt areas, where they graze in the outlying pastures. The Merinos lambs are generally born after the flocks come back down from the mountains, around October. The lambs in Prealpine flocks are born in the spring. Lambs are raised in the sheepfold on their mothers’ milk, hay and grains. These lambs are called “laitons” Older lambs, called “tardons” or “broutards” also feed on the meadow grass. |
