ASPARAGUS
: Green or purple, from Mont Ventoux or the Luberon, the iridescent tips of the asparagus start emerging from the ground with the arrival of the month of March. The ambassador of springtime, slender asparagus with their perfectly formed tips appear on the market, eagerly awaited by impatient gourmets. And as the wild asparagus starts sprouting amidst the scrubland throughout Provence, people take to the hills to gather it! Served in an omelette, in bouillabaisse of asparagus, in puff pastry and tarts,asparagus is versatile and accommodating. The simplest, however, is often the best, just steamed and served with fleur de sel and olive oil. Asparagus is the star of elegant meals, where it proudly assumes, all on its own, the role of an exquisitely simple starter dish!

| The vegetable |
| On the root or the rhizome of asparagus, called the “griffe”, the buds give rise to a stem which grows upwards toward the sky. This firm stem, called the spear, or “turion”, first grows sheltered from the light. It is white, but as it approaches the soil level, it gradually takes on color. Asparagus can be white, green, purple and whitish-purple. The different colors can be the same variety, but will be grown differently or harvested at different times. |

| From the field to the table |
In the past, farmers grew asparagus by heating the soil to 25°C. Asparagus was forced as of early November, and was harvested between the twentieth to the fortieth day after the first heating started. Today, this type of traditional forcing has disappeared.
In the Luberon you will find primarily green asparagus, grown in heated greenhouses or under cold tunnels. This asparagus Is harvested in February-March. White asparagus comes primarily from the Comtat Venaissin – the tip turns violet when the asparagus reaches the open air. This asparagus is grown in the open field, and is earthed-up, or ridged, to keep it covered with soil. It is harvested from February to June. Production of asparagus remains very labor-intensive and requires great skill and knowledge. Asparagus remains a delicacy, and is enjoyed hot, warm or chilled, with a vinaigrette sauce or a mousseline sauce. It also features as a star ingredient in other refined preparations. |
