BLACK FIG : Figs were already referred to in the Bible. They originate in Asia Minor and quickly spread throughout the Mediterranean basin. They were highly appreciated by the Romans, the Phoenicians and the Corinthians who slipped figs into the raisins they were exporting to Venice, for they were less expensive. This trick led to the saying “mi-figue, mi-raisin”. Today, there are no less than 700 varieties, including the purple fig from Caromb, the “Solliès” which accounts for 80 % of the market. Under a purplish-red skin, there is deep red flesh. Some fig trees bear fruit twice in the year, with harvests in early July (fairly big fig-flowers), and autumn figs in August and September. Dried figs, which are brown and soft, begin their season in July, and dry and lighten in color toward December. They are part of the 13 desserts for Christmas in Provence..

 

THE fruit

There are two basic varieties of figs:
- white figs (known as “the Marseillaise”): pale green skin, red, sweet flesh. Very flavorful but fairly rare due to the fragile nature of the fig, which makes it hard to transport.
- purple figs (known as “the Noire de Caromb”, Solliès, which accounts for 80 % of the market. There is also the “Goutte d’Or” from Nice). Purplish red skin, garnet colored flesh. Some fig trees produce fruit twice a year, with harvests in early July and then in August-September.

Dried figs begin their season in July, when they turn brown and full. They become drier and lighter as December rolls around. Dried figs primarily come from Turkey, where they are dried in the sun, washed in sea water then steamed.

A GROWER's recommandation
Choose your figs soft to the touch, sound and fleshy, with a firm stem. This will give you perfectly ripe, tender, soft and delicious fruit. A drop of white milky substance at the base is a good sign that the fruit is very fresh.
