Strawberry : The wild strawberry left the cover of the forest relatively early on, and was already being grown in the gardens of the Louvre during the fourteenth century. Ever since a sailor (appropriately named Frézier) brought back a Chilean variety and crossed it with the wild strawberry, there hasn’t been a serious gardener around who hasn’t his dreamed of creating his own strawberry variety. Strawberry growing developed around Carpentras as early as the late nineteenth century, when it replaced the failing silk and madder-dye industries. The four varieties of the Carpentras brand - serving the finest tables around - are the Pajaro, Agatha, and Ciflorette (perfect in pastries) plus the Garriguette, which has the loveliest aroma of all.

 

THE fruit

Carpentras strawberries or the “fraise de Carpentras” is a trademark, registered in 1987. The appellation covers four varieties – the Pajaro, with average size fruit, dark red in color, the Agatha, which is harvested slightly earlier, the Ciflorette, slightly more acidic and perfect for pastry-making, and the Garriguette with long slender fruits, created in 1976, one of the most beautiful aromas around.
Imports of strawberries from southern Europe have made for slight setbacks, but the Carpentras strawberries remains a strong second, and wins hands down when compared to any others !
 
FROM THE STRAWBERRY FIELDS TO THE TABLE
Modern techniques and the creation of new varieties have resulted in the availability of flavorful strawberries on the retail market from March through to June. Strawberry growing follows a strict calendar. Strawberry plants are refrigerated until July, when they are removed from the cold and planted under plastic cover, sheltered from the sun until the first frosts. This is the dormancy period. Then in January, work gets underway again. The leaves are pruned for faster growth, and tunnels are set up to protect the strawberries from the cold weather. When the first flowers appear, the bees get to work. In one month’s time, the flower will turn to the fruit. Close surveillance follows, in order to harvest at just the right time, for within just 24 hours, pale pink strawberries can turn a bright red.

Did you know ?
Strawberries are not fruit !
They are the floral receptacle holding the tiny yellowish seeds, known as “achenes”, which are the true fruit.
A Carpentras Homemaker’s Tip
To retain all the fragrance of the strawberry, don’t remove the stem until after you’ve washed the berries. Use water sparingly in rinsing your strawberries - above all don’t let them soak in water.
