Cristallized fruits: Apt is a land of orchards which grew into the title “Capital of Candied Fruits” thanks to its long-standing tradition and expertise. The confectionery secrets that have been handed down from generation to generation are contained within the copper cauldrons in which tradition has continued to simmer. The arrival of the popes in Avignon drew artisans of all kinds to the papal court, including the skillful candied fruit makers from Apt. From that time on, the glory of the city of Apt was assured. Today, most of the candied fruits made in the area are industrially produced. The company Kerry Aptunion in Apt is the leader. However, Vaucluse has many artisans who continue to work in the old-fashioned way, primarily in and around Apt and Carpentras..

 

CANDIED FRUITS MAKING

Candied fruit making is an art which requires special skills, patience and care. The fruits are selected from among the most flawless the orchard has to offer. First they are blanched, then they are plunged into a sulfur bath and in boiling sugar. At this step, they undergo 7 successive steps in boiling syrup, to gradually replace the fruit’s water with sugar. The entire process requires three weeks to one month of daily work. Citrus fruit requires longer times. After this period comes the filling step, which consists of refilling the fruits with its candied contents to provide it with its original shape. The last step is to ice the fruit, giving it a beautiful glowing shine. Apricots, figs, greengage plums, tangerines, melons, bigarreaux cherries, pears... these candied fruits are simply enjoyed as is. They also decorate the splendid Provençal king’s cake. These delightful sweets, which Queen Anne of Austria and Madame de Sévigné loved, were distinguished by the National Board of Culinary Arts, under the label “Fruits confits d’Apt”, and earned Apt the title of one of the 100 Remarkable Good Taste Sites in France.

    This 65-hectare site is home to the largest candied fruit factory in the world, producing 30,000 tons each year. Candied cherries account for the largest volume, with production of 10,000 tons. Thirty tons of cherries are candied each day. Kerry Aptunion is the world leader for candied fruit. Groups of up to 60 persons are welcome. Kerry Aptunion offers visits of the factory all year long.
