HONEY : A natural food par excellence, honey has been a choice part of man’s nutrition since time immemorial. Bees abound in Provence, foraging in the flowering trees on the hills, among the pungent herbs in the shrubland, and in the lavender fields. The bees move with the changing flowers of the seasons, and each area contributes shades of taste. While the cicadas sing away, the bees are working. In March- April, honey comes from rosemary and thyme. In May, you find “all-flower” honey. In July and August beekeepers are busy harvesting the subtly flavored lavender honey, with its unequaled taste. Lavender honey is truly one of the best symbols of Provence. After the transhumance, you find acacia flower honey, oak honey, or mountain honey.

Did you know ?
A beehive holds between 20,000 and 70,000 bees depending on the season. Each bee carries out its domestic tasks according to instinct and its age. First the bee is a cleaner, then a feeder, then a waxer and a ventilator, before being authorized to buzz about in the flowers, a task it will perform up until it dies. |

A Provençal Bee says
There are two “label rouge” awarded to honey from Provence. One distinguishes honey made from many different flowers, and is called “miel toutes fleurs de Provence”, and the other is honey made from lavender flowers, called “miel de lavande”. These two types of honey should be preferred to honey from many different origins, labeled “origines diverses”! |
