Aromatic herbs : Pèbre d’aï, farigoulo, sauvi … is Provençal for savory, thyme, sage ... With rosemary, oregano and others, you’ve got the beginning of the list of the herbs which grow wild in the garrigue, or rocky brushland in Provence. In Vaucluse, they are all an arm’s stretch away, in the hills, the gardens or simply alongside the walking paths! Herbs go into many dishes, adding nuances of flavor and spice. They can be quite strong, and each goes well with certain preparations. Thyme and lamb go hand in hand. Where would rabbit be without rosemary? Basil and tomatoes are inseparable, and oregano has found its way into infusions which flavor the Papaline candy ... The aromatic herbs of Provence give new life to everything. They are the scent of the south.

 

THE herbs

The appellation “Herbes de Provence” has unfortunately often been overused, and the blends and origins of the herbs themselves could be highly varied. Now, there is a “Label Rouge”, in existence since late 2003, which governs the label “Herbes de Provence” and guarantees top quality in the blend, without necessarily guaranteeing origin. The Label Rouge blend consists of 19% thyme, 26% rosemary, 26% sarriette, 26% oregano and 3% basil. The choice of plants, strict production methods and the drying process ensure top quality.
 
Full of aromatic herbs
The “Origan du Comtat” is a liqueur made from 60 different plants, gathered, as always, on the slopes of Mont Ventoux. The actual composition remains a closely-guarded secret. Ingredients include sage, lemon balm, angelica, juniper berry, lemon verbena, serpolet, thyme, genepy and oregano.
This local liqueur also fills the heart of the Papalines d’Avignon, the lovely thistle-shaped candy coated with pink-colored chocolate.

Did you know ?
In the past, it was quite customary to strew aromatic herbs in the streets before the passage of royal processions. Dried thyme and rosemary were scattered along their path, with the purpose of protecting the sovereign from the plague or other diseases.
Advice from a Provencal herb gatherer
Gather your herbs early in the morning, when they are in full growth period – in the spring or the summer. It’s better to use herbs once they’ve dried, rather than fresh, except for basil and mint. Their flavor is more concentrated yet less aggressive.
